Stunningly beautiful Damascus Santoku from Aritsugu
Santoku is a name for this type of all-round short knife with wider blade. It is a great shape and size for home use and for use during service in busy professional kitchens.
The Blue ( or Ao in Japanese ) carbon steel and soft iron are layered and forged multiple times to create beautiful 8 layers of Damascus patterns. A good volume of steel at the back gives medium weight to the knife while tapered out blade near the edge line promises precise cuts and control. Traditional Japanese style handle is made of Japanese Big Leaf Magnolia ( Ho wood ) which is naturally antiseptic, capped with Water Buffalo Horn ring. This knife is made from Blue carbon steel and will rust if not maintained but has a superior sharpness and durability that nothing can beat. In fact, once you experienced the sharpness and long durability of carbon steel, it is hard to go backwards. Finely sharpened carbon steel edge just simply perform too well.
Aritsugu is known as one of the 2 best knife makers in Japan and has more than 400 years history forging swords then knives.
This knife comes with a wooden Saya sheath for protection and a Rust eraser can be purchased together for maintenance.
Again, this knife is made of high carbon steel and will rust if not maintained properly. Please wash and dry completely and store in dry place after use. A grey coat of patina form over the carbon steel edge and it is perfectly normal, harmless and to protect the blade from rust.
The small gap or space between the top of handle and bottom of the blade is called Machi.
Please note that Machi is used to adjust the depth of the blade to the handle and is not a defect.
