Kurouchi Wa-Gyuto chef knife from Gokoo.
Gokoo is a small but brilliant artisan knife smith in Chiba prefecture, East of Tokyo.
The master knife - smith Mr Yamakawa specialises in hand- forging knives in small numbers using traditional skills and methods.
Mr Yamakawa’s knives are listed on Chiba Prefectural Traditional Crafts and are sought after by many Japanese professionals.
 
 
Gyuto ( Japanese style chef knives ) are definitely the essential and most popular all-round knife in every kitchen.
Japanese chef knives have sleeker and thinner blade outline than European chef knives and tapered edge guarantees more precise performance.
The blade has thin convex shape called “ Hamaguriba “ which means Clam shell shaped blade in Japanese.
This shape has come from Japanese samurai swords and is the secret for the superior sharpness of Japanese knives.
This knife has a stunningly beautiful ,rustic unpolished black patina at the top half of blade.
The core Shiro ( White ) 1 high carbon steel is a top quality Japanese knife steel and 
is “ Sanmai “ forged with soft iron for shock absorbent.
The forged Shiro 1 steel is very hard and stays sharp for long time.
Many people have now found out the sharpness of fine carbon steel edge and have fallen in love with them.
Once you are used to sharp Japanese carbon steel knife, it is hard to go back to stainless steel knife.
The D-shaped handle is made of burnt Chestnut wood and it fits comfortably in your hand. 
Burnt Chestnut wood is light, durable and in old days, Chestnut woods were used for railway pillows for their toughness and durability.
This size is great for professional kitchens or 210mm and Santoku 165mm are ideal for home use.
 
Please note that this knife is made from high carbon steel and will rust if not maintained properly.
Please wash , dry thoroughly and keep in cool dry place after use.
Grey layer of patina may form over the blade but it is normal and it protects the steel from corrosion.
Each knife is handcrafted with love, pride and maybe some scratch or hammer marks from the knife master.
Due to the nature of handcrafted products, length colour, shape or weight may slightly differ from knife to knife.
Each knife is hand sharpened prior to shipping for full performance.

    The Gokoo 240mm gyuto knife is just BEAUTIFUL to use. Super sharp. Lovely balance. I am now a convert to carbon steel! Thank you Saito. You have converted me!

    First sharpening

    The knife was already excellent when first arrived. Now I had the pleasure of doing the first touch up sharpening. It takes AMAZING edge after sharpening and the feedback is briliant. Deburring is EASY PEASY. My arm hairs are literally popping off when I did shaving test. I want to give 10 out of 5, but the system only allow 5 out of 5. BRILLIANT

    Beautiful knife. Has that old school rustic charm and "wabi sabi" feel to it. More robust than laser. Solid performer. Develop sexy blueish patina. Very happy.

    Beautifull knife seemingly capable of near any task. Tip of blade for fine work and back end of blade suits heavier tasks.
