Yanagiba sashimi knife from Gokoo
This authentic shape of sashimi knife is called Yanagiba ( Willow leaf blade ) and has a large surface of edge on one side and hollow ground ( concave ) on the other side. This shape is the secret for the sharpness of Japanese knives as the hollow side help flow the ingredient while edge side separate or push away the cut ingredients.
The core blade is Japanese Gold stainless steel forged with 8 Chrome - Vanadium stainless steel. Each knife has a unique pattern called Kasumi from forging 2 types of steels together.
The D shape handle is made of Ho-wood ( Japanese big leaf Magnolia ) capped with a Water Buffalo horn ferrule. Ho - wood is light, naturally antibacterial and increases grips when wet.
This knife is handmade with love, pride and maybe some scratches from the knife master.
Size, weight and colour including the ferrule may be slightly different from knife to knife and maker's mark may be thin in some knives.
Each knife is hand sharpened prior to shipping for full performance.
The small gap or space between the top of handle and bottom of the blade is called Machi.
