This unique Western style boning / filleting knife was handcrafted by Masaaki Saito, our proprietor / knife master in Brisbane.
This is not a traditional style Japanese filleting knife, however, we had many requests for the shape so these have become our new lineup.
This Non flexible knife has a curbed shape and the pointy tip works well for trimming, perfect for filleting fish or boning poultry, beef or lamb.
The blade is made of Swedish 12C27 stainless steel.
12C27 is known for the amazing edge retention and for its easy maintenance character.
The handle is made from stabilized Maple fitted with 3 pins.
The polished timber handle not only is beautiful but gives you an amazing grip and comfortable feel.
