This Western style boning / filleting knife was handcrafted by Masaaki Saito, our proprietor / knife master here in Brisbane.
This is not a traditional style Japanese filleting knife, however, we had many requests for the shape and these have become our new lineup.
This Non flexible knife has a thin, tapered profile, perfect for filleting fish or boning poultry, beef or lamb.
The blade is made of 12C27 stainless steel.
12C27 is known for the amazing edge retention and for its easy maintenance character.
The handle is made from stabilised Northern Silky Oak fitted with 3 pins.
The polished timber handle not only is beautiful but gives you an amazing grip and comfortable feel.
