SAITO KNIVES By Masaaki Honesuki 170mm Stainless Steel

This Kansai style Honesuki ( also called "Sabaki" ) knife was handcrafted by our in-house knife master Masaaki Saito here in Brisbane.
Honesuki is a small Japanese style boning knife for preparing poultry and can also be used for boning beef, pork, lamb or fish as well.

This double beveled Honesuki has a pointy tip perfect for trimming and de boning.  
The blade is made of Swedish 12C27 stainless steel.
12C27 has an amazing edge retention and thanks to the fine structure, is very easy to sharpen.

The handle is smoothly polished birdseye Maple secured with 3 brass pins.
