This Kiritsuke knife is handcrafted by our in-house knife master Masaaki Saito here in Brisbane.
Kiritsuke is a traditional Japanese style chef knife widely used before Gyuto or western style chef knives became popular.
Like any other trends that come and go and come back, the trend of Kiritsuke knives has come back once again and more than ever.
This kiritsuke has a great size in blade width so when slicing or mincing on chopping board, it is less likely to hit your knuckle against as well as the wide blade face helps cutting without forcing.
The Blade is made of 12C27 stainless steel and has 50: 50 universal edge for both hand users.
12C27 is a high performance, very reliable knife steel and has an amazing reputation for easy maintenance and long edge life.
The handle is made of Silver Quandong secured with 3 pins,
The polished natural wooden handles are so comfortable to hold and can add a beautiful colour to the kitchen.
This knife is one and only, made by our knife master Masaaki Saito from handle to blade at here.
