This beautiful kiritsuke with Tsuchime patterns ( Hammered dimples ) was handcrafted by our house knife master Masaaki Saito here in Brisbane.
Kiritsuke is a traditional Japanese style chef knife widely used in the past before Gyuto or western style chef knives were introduced.
Like any other trends that come and go and come back again, Kiritsuke knives are regaining the popularity once again.
This Kiritsuke has a good weight with a wide blade width of 55mm at heel so the knife does the cut without you pushing hard and there is no need to concern about your knuckle hitting chopping board while pushing the heel.
The blade is made of Swedish 12C27 stainless steel, thinly tapered to 50:50 ratio for both hand users to make the best performance possible.
Swedish knife steels are known for the fine structures and long edge retention.
The semi octagonal handle is made of Red Ironbark and Silver Ash ferrule from Northern NSW.
The polished natural wooden handle is very comfortable to grip and the stunning looks / performance of this Kiritsuke is just a joy to own and use.
