This Mioroshi Deba was handcrafted here in Brisbane by our in-house knife master, Masaaki Saito.
Deba knives are thick and heavy traditional Japanese fish filleting knives and Mioroshi Deba is one of the Deba types with sleeker outline specialised for filleting while the blade is still tough enough to cut through fish bones.
Mioroshi Deba knife, like other types of Deba has a single bevel with a concave on the flatter side for an excellent flow against the flesh.
Unlike western style thin flexible filleting knife, Deba has rather solid blade developed from Japanese cuisine using all part of fish to create dishes.
If you are a first time user, you may feel uncertain for a few goes but once you get used to and understand how Deba works, there is no way that you could go back.
This Deba is made for right hand users and has a sleek outline to make the filleting very easy.
The Blade is made of Swedish 14C28N stainless steel.
14C28N is an amazing blade steel known for the great corrosion resistance and edge retention.
The D-shaped ( also called Chestnut because of the shape ) handle is made from Australian Teak and Red Gum ferrule.
The polished natural wood gives an amazing feel and grips to your hand.
