This traditional style Yanagiba sashimi knife was handcrafted here in Brisbane by our in-house knife master Masaaki Saito.
Yanagiba is a Kansai style sashimi knife meaning Willow leaf blade in Japanese and as the name suggest, it has a very thin, skinny blade face for slicing paper thin sashimi.
This knife has authentic single bevel for right hand with a slight hollow ground / concave at the flat side.
This is the key and secret for the sharpness of Japanese knives and you will be able to slice sashimi of Tuna, Salmon, reef fish or even raw beef effortlessly.
The blade is made from 12C27 stainless steel carefully heat treated then ground to the right blade geometry and finish with hand sharpening for perfection.
The D-shaped handle is made from Teak and Rosewood both sourced from Northern Rivers NSW.
The polished natural wooden handle gives you an amazing grips and the D-shape fits comfortably.
