This Sujihiki slicing knife was handcrafted by our proprietor Masaaki Saito here in Brisbane.
Sujihiki is a thin, long Japanese style slicing knife originally used by butchers for breaking down loins, trimming sinews and portioning steaks.
Sujihiki knives these days are used for more variety of tasks including skinning and cutting fish portions, carving roasts or slicing Carpaccio and smoked salmons.
The blade is made of Swedish 12C27 stainless steel and has a thinly tapered 50:50 universal edge for both hand users.
12C27 is an amazing knife steel with a very good edge retention and easy maintenance makes this knife a perfect workhorse.
The handle is made from Maple secured with 3 pins.
The polished natural wooden handle is so comfortable to hold and it outshines from other mass produced knives with artificial handles.
This knife is one and only, handcrafted from the tip of the blade to the end of handle at here by Masaaki Saito.
