Wa Gyuto from Yosimitu Kajiya.

Gyuto is a multipurpose Japanese style chef knife widely used in Japan and worldwide.

These light weight knives have sleek outlines with thin blade profiles and relatively small handles make it a perfect knife if you like a compact feel in your hand.

The core White 2 steel ( Shiro #2 ) is a Japanese high carbon steel with a great sharpness, clad with soft iron to gain shock resistance and the octagonal Walnut handle sits very comfortably in your hand.

We have 4 different sizes starting at 180mm blade length, 210mm, 240mm and 270mm.
180mm to 210mm is an ideal size for home kitchen or anyone inexperienced while 240mm / 270mm can be great for commercial use or anyone with good knife skills. 

Yosimitu Kajiya is a local blacksmith from Nagasaki Japan and the blade smith Ide san forges amazing kitchen knives using traditional methods.

Each knife is hand-sharpened at here prior to dispatch for superior sharpness out of box and free shipping Aus-wide.

Please note that knives made from high carbon steel and can rust if not maintained properly.
These knives are not designed to cut frozen food, bones or extremely hard / fibrous ingredients like hard cheese rind, Lemongrass or Galangal.  
These are handcrafted knives and the size, colour or look may differ from knife to knife.
The black " Kurouchi " part will be faded if you scrub hard with coarse sponges, cleansing compounds or steel wool so we recommend to use a soft sponge only to the blackened area.

    I got the 255mm Gyuto. This knife has a hybrid profile between Gyuto and Sujihiki. Very sleek and sexy. This knife benefits heavily from thinning. It has narrower blade height than 240mm Gokoo but the edge retention is better. The edge characteristic is similar to the Gokoo, but Yosimitu has more bite and more suited to higher grit finish. I take mine to 12,000 grit and it still bite through tomatoes. Weight is very light and nimble despite the length. The handle material gets grippiers when wet as the wood pores open up. Thinning is very easy. I love this. Definitely recommended.
