SAITO KNIVES By Masaaki  Boning / Filleting Knife Stainless Steel 200mm

This Western style boning / filleting knife was handcrafted by Masaaki Saito, our proprietor / knife master here in Brisbane.
This is not a traditional style Japanese filleting knife, however, we had many requests for the shape and these have become our regular lineup.

This Non flexible knife has a medium bodied profile, perfect for filleting fish or boning poultry, beef, pork or lamb.

The blade is made of 12C27 stainless steel.
12C27 is known for the amazing edge retention and for its easy maintenance character.

The handle is made from Budgeroo fitted with 3 pins.
The polished timber handle not only is beautiful but gives you an amazing grip and comfortable feel.

Add this rustic knife to your collection and the boning / filleting jobs will be a piece of cake.
