Blue carbon ( Aogami 2 ) Santoku knife from Yosimitsu Kajiya.

Santoku is a short multipurpose Japanese knife with rounded tip and decent blade width.
The short wide blade with rounded tip comes in handy when using knife in a tight limited space or if you are not used to large knives.

This light weight knife has a sleek outline with thin blade profile and relatively small handle makes it a perfect knife if you like a compact feel in your hand.
There is a good volume at the spine near the handle which is distal tapered towards the tip.

The core Blue 2 steel ( Aogami #2 ) is a top grade Japanese high carbon steel with a great sharpness, forged with soft iron to gain shock resistance and the octagonal Walnut handle sits very comfortably in your hand.

Yosimitu Kajiya is a local blacksmith from Nagasaki Japan and the blade smith Ide san forges amazing kitchen knives using traditional methods.
Each knife is hand-sharpened at here prior to dispatch for superior sharpness out of box and free shipping Aus-wide.

Please note that knives made from high carbon steel can rust if not maintained properly. 
These knives are not designed to cut frozen food, bones or extremely hard / fibrous ingredients like pumpkins, hard cheese rind, Lemongrass or Galangal.  
These are handcrafted knives and the size, volume, colour or look may differ slightly from knife to knife.
